Салата з дзьмухаўцоў з кукурузнымі шматкамі. Кветкі дзьмухаўца адварыць у падсоленай вадзе, адкінуць на друшляк. Дадаць парэзанага адварнога мяса. Пасыпаць кукурузнымі шматкамі. Змяшаць.
Салата з дзьмухаўцоў і памідораў. Вам спатрэбіцца: палова цыбуліны, 2 ст. л. рысавага, яблычнага або віннага воцату, шклянка гарачай вады, 2 памідоры сярэдняга памеру, 3 кубкі свежых маладых нарэзаных лісткоў дзьмухаўца, 2 лыжкі свежага базіліка. Для запраўкі: 1 ч. лыжка бальзамічнага воцату, дробка груба змолатага чорнага перцу, дробка солі, аліўкавы алей. 1. Нарэжце цыбулю тоненькімі кольцамі, змяшайце гарачую ваду з воцатам і замарынуйце ў ёй цыбулю. 2) Змяшайце сухія кампаненты для запраўкі паміж сабой, а потым з аліўкавым алеем і воцатам. 3) Прамыйце і прасушыце зеляніну дзьмухаўца і змяшайце з 2/3 запраўкі для салаты, змясціце ў салатніцу. 4) Разрэжце памідоры папярок і дайце сцячы соку. Разрэжце палоўкі памідораў на 4 часткі, выміце мякаць і нарэжце на кавалачкі. Выкладзіце памідоры на лісце дзьмухаўцоў. 5) Выкладзіце зверху кольцы марынаванай цыбулі, паліце салату рэшткамі запраўкі і ўпрыгожце базілікам. Калі хочаце, каб салат выйшаў больш пажыўным, можна дадаць у яго казіны сыр або мацарэлу.
Акрамя салатаў з дзьмухаўцоў можна прыгатаваць першыя і другія стравы, соусы і запяканкі. Дзьмухавец з зялёнай капустай. 100 г лісця дзьмухаўца апарыць кіпенем, вытрымаць 5 хвілін, ваду зліць. У кіпячы булён (1,5 літра) пакласці здробненыя лісце дзьмухаўца, шчаўя (50 г), першацвету або пастуховай сумкі (50 г), паварыць 5 хвілін. 100-150 г смятаны змяшаць з курыным сырым жаўтком і ўліць у капусту. На стол падаваць з грэнкамі.
Катлеты. Прыгатуйце звычайным спосабам фарш. Дадайце ў яго здробненае лісце дзьмухаўца, змяшайце. Сфармуйце катлеты і пячыце іх на распаленай патэльні або рыхтуйце ў мульціварцы.
Запяканка. Прыгатуйце запяканку па традыцыйным рэцэпце. Гэта можа быць запяканка бульбяная, тварожная, рысавая і любая іншая. У якасці вітамінавага напаўняльніка перад пачаткам запякання увядзіце ў масу парэзаныя пялёсткі ці лісце дзьмухаўца, або здробненыя карані дзьмухаўца.

На 5 літраў напою вам спатрэбіцца: банка кветак дзьмухаўца аб’ёмам літр (вельмі шчыльна запоўненая), 2 цытрыны (можна апельсін замест другой цытрыны), 1,5 кг цукру, 100 г разынак, пару галінак мяты ці мелісы (неабавязкова). Кветкі дзьмухаўца вельмі добра прамыць у праточнай халоднай вадзе. Каб віно не гарчэла, з кветак трэба зразаць зялёную частку і пакінуць толькі пялёсткі. Пакласці пялёсткі ў рондаль. Заліць халоднай вадой, лепш за ўсё кіпячонай (каля 4-4,5 л) і пакінуць на суткі пад вечкам. Праз суткі прыгатаваць сіроп з цукру і паўлітра вады. Дзьмухаўцы давесці да кіпення. Пасля астудзіць. Працадзіць адвар праз папяровы фільтр. Зняць скурку з цытрын. Выціснуць з іх сок. У адвар дзьмухаўцоў уліць сіроп, сок цытрын. Дадаць мелісу ці мяту, цэдру і нямыты разынкі. Усе размяшаць і пакінуць на двое сутак для закісання. Праз 2 дні выдаліць скурку і травы. Пакінутую вадкасць выліць у вялікую бутлю (разынкі таксама), надзець на рыльца гумовую пальчатку з адтулінай у пальцы. Даць настаяцца на цёмным месцы, каб дабрадзела. Тэмпература ў памяшканні патрэбна пакаёвая. Калі віно дабрадзее (пальчатка перастане надзімацца), аддзяліць ад асадку (пераліць пры дапамозе гумовай трубкі, каб не боўтаць сумесь) і разліць у бутэлькі. Шчыльна закаркаваць і пакінуць віно даспяваць у цёмным прахалодным месцы мінімум на 3 месяцы.
Кактэйль. 1 сталовую лыжку пасечанага лісця дзьмухаўца і 2 сталовыя лыжкі дробнапасечаных кветак дзьмухаўца дадаць у 0,5 літра ёгурта або кефіру. Для надання салодкага смаку дадаць сталовую лыжку мёду. Усё змяшаць блендерам і разліць у келіхі. Зверху ўпрыгожыць дробнапасечанымі грэцкімі арэхамі.
